Oven Roasted Leeks With Herbs de Provence
Serves 3-4 people
6 medium leeks, cleaned & cut lengthwise into quarters
2 tbsp. olive oil
1/2 tsp. Herbs de Provence
. teaspoon salt
. teaspoon pepper
. cup of chicken or vegetable stock
Cooking Instructions
Pre-heat the oven to 400°F. Clean the leeks and cut lengthwise into quarters. In a roasting pan with sides, toss the leeks with olive oil, Herbs de Provence, and salt and pepper to taste. Roast the leeks until they are tender for about 35-45 minutes. While roasting, add a small amount of broth every 20 minutes to the leeks so they stay moist.
